Spelt is thought to be the most ancient wheat variety used in food. It is one of the least calorific cereals, contains very little fat and is high in fibre, B vitamins and proteins. Easy to digest, it gives a feeling of fullness but is not heavy. We source this flour from a mill in Emilia-Romagna, where it is made from organic spelt grown in Italy. Our spelt flours are white and semi-wholemeal.
