Our doughs are still kneaded by hand to supplement the work of machinery, because there’s no technology that can replace a skilled baker.

We're extremely rigorous in our selection of raw materials, which are strictly organic.

Once kneaded manually the old-fashioned way, the dough rests, allowing the natural proving to take place. Then it's baked, slowly, at low temperature.
