C&#8217;est l&#8217;une des c\u00e9r\u00e9ales les moins caloriques. Elle contient tr\u00e8s peu de mati\u00e8res grasses et est riche en fibres, vitamines B et prot\u00e9ines. Facilement digestible, elle rassasie sans alourdir. Cette farine est achet\u00e9e dans un moulin en \u00c9milie-Romagne, et est obtenue \u00e0 partir d&#8217;\u00e9peautre bio cultiv\u00e9 en Italie.
